I use many types of salt in my cooking but it wasn't until I tried this sel du Guerande that I realized I'd been missing the boat. This is simply the best. It has a clean taste of the ocean without the "dirtyness" other salts can impart. Use it as a condiment, sprinkled on after cooking.

Fleur de Sel gives more intensity to salad dressings and is the moist, caviar of salt that is hand raked from the surface of salt ponds on the coast of France during July and August. You will need a mortar and pestle to grind the salt, but it is so worth your time.
This salt has a distinct salty-from-the-sea flavor that is unique to these salts. The flavor just fills your entire mouth. Normal table salt will pale in comparison and almost has a chemical aftertaste in comparison to this highly prized salt.
French chefs have known this secret forever and when I found this salt, I told everyone I knew about the flavor. Sprinkle this salt onto anything you want just before serving, especially good on steaks or freshly cooked vegetables. Also delicious with butter and rosemary on freshly baked bread.
Want to taste the best caramels ever? Look for Fleur de Sel Caramels. They will not last long.

I learned about this salt while visiting Arcachon, France and observing my friend cooking in her kitchen. When I asked about it, her husband conducted a taste test with regular table salt used in the US and Fleur de Sel from Guerande. The table salt tastes bitter and over powering compared to the lovely mild flavor of this hand harvested sea salt. So when I got home, I ordered myself some. There is a huge difference in the flavor of foods I'm cooking now!

This salt is very very 'salty' with a somewhat bitter aftertaste.
There are better products (search for South African East Coast sea salt).
I much prefer Maldon's, which is hardly gourmet.
